Ingredients

  • 1 Head of cauliflower, cut into florets
  • 2 Cloves garlic, minced
  • 2 Tablespoons fresh chives, chopped
  • 1/4 Cup Greek yogurt (or dairy-free alternative)
  • Salt and pepper to taste

Instructions

  1. Steam cauliflower florets until tender (10-12 minutes).
  2. Sauté minced garlic in olive oil until fragrant (1-2 minutes).
  3. Blend steamed cauliflower, sautéed garlic, chives, Greek yogurt, salt, and pepper until smooth.
  4. Adjust seasoning as needed.
  5. Garnish with extra chives if desired and serve hot.

Notes

  • Customization: Feel free to add herbs like thyme or rosemary for additional flavor.
  • Texture: For a chunkier texture, mash the cauliflower with a potato masher instead of blending.
  • Dairy-Free Option: Substitute Greek yogurt with a dairy-free yogurt or cashew cream for a vegan alternative.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave.
  • Pairing: Pairs well with roasted meats, grilled vegetables, or as a topping for shepherd’s pie.
  • Health Benefits: Cauliflower is rich in vitamins C and K, and provides a good source of fiber.
